Penne Rigate is a short, straight, diagonally cut pasta with ridges on the outside. The name "penne" actually refers to the diagonally cut tip of an ink quill, hence its shape. Penne rigate pasta is an excellent choice for baked pasta dishes, and can be paired with thick tomato sauces as well as light olive oil sauces.
